There have been lots of requests for the recipe for my signature hand-decorated vanilla biscuits that I made on episode 2 of The Great British Bake Off. On the programme I made a collection of biscuits that are perfect for a girly tea party, with shoes, dresses, handbags and little teapots and cups too. The recipe can be found in The Great British Book of Baking (the book to accompany the series).
If you want to ice them like I did, you will need to use royal icing sugar to make your icing rather than standard icing sugar - there is a mistake in the recipe in the book.
200g softened unsalted butter
200g white caster sugar
1 large free range egg
400g plain flour
2 vanilla pods
Cream butter, sugar & vanilla seeds until creamy
Beat in the egg
Add flour and mix on low speed until dough forms
Roll into two balls, wrap in cling film and chill for at least one hour
Roll out and cut into chosen shapes
Preheat oven to 180 degrees
Chill again if time
Line baking tray with baking parchment
Bake for approx 10 mins – until golden brown at the edges
Cool on a wire rack
1 box of ready mixed Royal Icing sugar (follow instructions on box) or,
Make royal icing with...
13g dried pasteurised egg white powder
500g icing sugar
1 tablespoon lemon juice
Colour icing as required
Pipe outlines with stiff icing
Run out icing and decorate biscuits.
I have lots more to make today- so I am off to make some biscuit dough now!
